    FRIED RICE
    6 cupsRice, cooked, chilled over night
    1 medOnion, chopped
    1 medGreen pepper, chopped
    1 cupMeat or seafood, your choice, cut into cubes
    1 cupPea pods, cut in half
    1 cupBean sprouts
    Sweet soy sauce (found in Asian markets)
    Fish sauce (found in most grocery stores)
    2 clovesGarlic, minced
    3 TbspOil
    1 TbspGinger, fresh, chopped (optional)
    2 – 3Eggs, beaten
    1.Heat oil in wok over medium heat
    2.Add garlic (and ginger if using), stir, quickly add meat/seafood and stir fry until it mostly done
    3.Add onion, green pepper and pea pods, stir fry until cooked but crisp
    4.Push food up on sides of wok, pour in eggs, scramble until cooked
    5.Add rice, mixing in well
    6.Pour enough sweet soy sauce over all circling wok twice
    7.Do the same with the fish sauce
    8.Taste and adjust the sauces as desired
    9.Stir to heat rice
    10. Add in bean sprouts, mix
    11. Serve hot
    Feel free to add in any other vegetables you desire. You can also add in fresh chopped cilantro with bean sprouts as well as chopped scallions.

    This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.

    Ingredients:
    1 – 2 green onions, as desired
    2 large eggs
    1 teaspoon salt
    Pepper to taste
    4 tablespoons oil for stir-frying, or as needed
    4 cups cold cooked rice
    1 – 2 tablespoons light soy sauce or oyster sauce, as desired

    Preparation:
    Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

    Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

    Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

    When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

    The quickest way to make simple Chinese fried rice:

    1. 3 cups of cooked rice.
    2. 1 season packet of oriental ramen flavor noodle, (don’t use the the noodles just the season packets)
    3. 1 teaspoon of sesame oil
    4. 3 table spoon of oil or peanut oil. Peanut oil is better for taste.

    a. Ad peanut oil and heat till hot and saute the rice in skillet or wok until the rice is fried 3 to 4 minutes. Makes sure you are stirring the rice while you are cooking it so it doesn’t burn. It is better to use a none stick pans.

    b. Empty the season packs on the rice and ad what ever meat and vegetables you wish to be in your fried rice. ( I use green onions and green peas, and for meat I like shrimp fried rice so I add in cooked shrimps) add the sesame oil and stir under heat for 1 minute, and you are done.

    c. If you like eggs in your fried rice, then pour out the fried rice that you just cooked in a large bowl, and beat 2 eggs and and fry then in the same pot or wok you cooked the fried rice in. Cook the eggs like scramble eggs and when the eggs are done put eggs in the bowl with the fried rice and tossed the eggs and fried in the bowl so as to mix.

    This takes about 10 minutes, and it is so good. Taste like Chinese restaurant fried rice.

    If you like pork fried rice use Farmer Johns breakfast sausages.

    Cut the sausages in half inch pieces and fry. When it is done pour out the grease and add peanut oil and fry the rice, Then do steps b and c.

    Heat pan and boil chorizo in a little amount of water to soften the chorizo. Set aside Put vegetable oil in the pan and saute the minced chorizo and garlic, Add minced onions and cooled cooked rice. Mix thoroughly, Add thawed frozen peas, corn and carrotsl{I I ussualy saute these in butter.}Season with salt and pepper.You may use soy sauce instead of salt Add strips of scrambled egg.     Basic Fried Rice Ingredients
    2 green onions, finely chopped
    2 large eggs
    1 teaspoon salt
    Pepper to taste
    3 tablespoons oil for stir-frying, or as needed
    4 cups previously cooked rice, at least 1 day old
    1 – 2 tablespoons light soy sauce or oyster sauce as desired

    The most important tip in making fried rice is to use rice that has been previously cooked. Using previously cooked rice helps keep the dish from turning out wet or mushy. While you can use rice that has been cooked the night before, 2 or 3-day old rice is even better.
    Gently rub the rice between your finger to break up any clumps (this will help the rice cook more evenly).

    In a small bowl, lightly beat the eggs with a fork or chopsticks until they are frothy.

    Heat a frying pan or wok on medium-high heat and add 2 tablespoons oil, swirling so that the bottom of the pan is coated. When the oil is hot, reduce the heat to medium and add the eggs.
    Cook the eggs, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

    Add 1 tablespoon oil, swirling so that the bottom of the pan is coated. Add the rice. Stir-fry for 2 – 3 minutes, until the rice is heated through.

    Stir in the soy sauce or oyster sauce as desired.

    When the rice is heated through, add the scrambled egg back into the pan. Add the green onion. Stir-fry to heat everything through.
