You could try cooking the coconut with condensed milk and mayonnaise. The mix with fried shrimp (minus the batter). I’m not sure what it’s called but my mom’s made it a few times. It’s pretty yummy. :)

Neither coconut milk or sushi is Chinese.

YOU can make certain curry dishes. I get sick from eating curry, but tehre is a curry crab I like. Also you can making fried shrimp. Here’s an interesting recipe http://chinesefood.about.com/od/shrimprecipes/r/shrimp-coconut.htm

Jethro, sushi actually originated in NOrthern CHina, and Coconut milk is used in the south. I think Hainan island, although I associate CHinese and Coconut milk more with SIngapore cooking style.

    Here’s another one. http://chinesefood.about.com/od/dimsumrecipes/r/scallionpancake.htm
